Alison’s Nettle Soup

(( Serves 8 ))

Ingredients:

4 Potatoes

4 cloves garlic

1 Lg Onion

1 tblsp vegetable stock (such as Harvest Sun)

3/4 tsp Salt

1/2 tsp black pepper

1/4 tsp nutmeg

1/2 tsp thyme

8 cups (or more) fresh nettles

1 cup cream (optional)

 

Directions:

Peel and dice the potatoes.

Dice the onion, and mince the garlic. 

Cook in a large soup pan, in olive oil until the onions are golden.

Add the spices and nettles.

Add approx. 8 (24) (48) cups of water.

Bring to a boil and simmer for 30 minutes until the potatoes are cooked.

Puree with an immersion blender.

Add cream and serve.
