Red Salal Jam
2 lbs Raspberries
2 cups Salal Berry Juice
3 lbs sugar
Makes 6 x 250ml jars
Preparing the Salal
The first step is to make the Salal Juice that is used in both this and the Red salal Jam recipes. Salal is very high in pectin, which helps to set the raspberries.
Gather lots of salal berries. Do not worry about removing them from their stems.
Place the berries in a large pan, and a couple of cups of water.
Gradually heat up the berries over a low heat, squish slightly with a wooden spoon to release some of the juice.
Simmer over a low heat for 40 minutes.
Pass through a food mill.
Refrigerate the juice until needed.
Preparing the Jam
Place the raspberries in a large pan, with 2 cups of salal juice.
Gradually heat up the berries over a low heat, simmer over a low heat for 10 minutes.
Add the sugar.
Bring to the setting point. Jar.
Process in a boiling water bath for ten minutes.
